Tenaya Darlington (a.k.a. Madame Fromage) is a local cheese blogger and cookbook author (Di Bruno Bros. House of Cheese, The New Cocktail Hour). By day she teaches Food Writing at Saint Joseph's University, and by night she leads tastings around the city. This summer, she traveled to Sicily  and fell in love with the island's many variations on ricotta.
